The plucking is the worse. If you plan on doing a large amount invest in a plucker (or have the Amish do it if you live near them).
Or just skin them. Way less trouble. I prefer skinless chicken anyway. And for ducks it is a must. Those feathers just refuse to come out!
See I’m the opposite. If we are roasting the bird, the skin is a must. With my soup birds, though, I do just skin them. Same with ducks, plucking them is a level in hell.
